The plum wine is ripe now. I just had a BIIIG glass with nachos as dinner. I'm not sure about food pairings- the nachos were neither red nor white, wine was neither also, kind of brownish pink? Seemed like a good pairing to me, and that is one of my criteria- whatever I brew has to go with what this bachelor eats. I may call the next batch "Wine to go with dinner eaten over the sink"? The porcelain sink is white... Lost it's really potent almond flavor that it had when 'green'. But a great wine none the less. Still some sediment, but sipping it through a straw in the 6 gallon carboy is just fine. Some might actually get put in to bottles. Like power Wagons, it is industrial strength. Not as bad as my very first batch of wine though. It needed a chaser- a sip would fritter your nose hairs. Now that I think a moment, it was plum too.

And some more home brew news- I've got a half dozen Loquat seedlings coming up from seeds thrown in the compost pile. I think I'll transplant a couple, they look like good shade trees. Besides, 300#, or 55 gallons, 275 bottles, from my neighbor's, trees like this year, might not be enough...
