biggest problem with wood is the moisture, wood needs to be dry, I like air dried vs kiln, because once you take it out of the kiln it tends to reabsorb some of the moisture it lost. If the wood is kiln dried I would air dry it for awhile so it will stabilize to an acceptable level.

In the past folks used poliester resin for bar tops, but poliester has serious problems with moisture and cracks and lifts after time, whereas epoxy seems to be moisture tolerant and still sticks without lifting even if the wood has a low moisture content.
