The kind of recipe Gramma would have used. Lard, flour, apples, sugar, salt, cinnamon. No gums, starches, mono- OR di- glycerides. Just cook it long enough to bubble, and the heat will set the natural pectins.
Gluten free flours don't work for pie crust. They taste right, but just don't work. No flakiness. Real pie dough, but I won't eat the crust.
