I made my computer desk out of a walnut log a friend gave me. I had it cut up by a local sawmill and after a few years in my garage to dry, I planed it up and used it.
Turned out nice, so I would encourage you to go for it for a table.
Remember the rule of thumb is at least one year of drying for every inch thickness. Also avoid knotty boards as they will want to warp.
