Your doors shouldn't sag, meaning, you shouldn't be able to move them up and down feeling movement. It should move the cab. Common problem is the bottom rivets on the hinge will have cracks in the door sheetmetal allowing movement and it'll just get worse.

I always thought he shims are there to hold it in place once shut. NOT to overcome sagging or misalignment.

I fought with getting my gaps even so it wouldn't hit. Worked several days and was getting REAL frustrated, Then it dawned on me, it's like the cab is out of wack. Used a porta power on 45 degrees and in 5 minutes it was perfect. These cabs are extremely week as most crack at the front mounts.

My 2 cents anyway.
