bbq is a true american art form. no two guys do it the same. we do a lot of bbq out here on long island. we brine everything we cook overnight first. it keeps everything moist. not tremendous users of smoke, but hardwood charcoal is manditory. a lot of stuff starts in the oven and finishes on the bbq. we had lots of bbq on our cross country drive.
