You can set up to run either gas or petrol, but you don't get the best out of either one. If you set it best for petrol the gas won't be as good as it can be and vice versa. Gas needs more compression and more advance on the ignition timing than petrol, where to get the best out of petrol you need better breathing, not as much advance and less compression.
There are a number of straight gas mixers out there that take the place of the carburetor. Impco used to have a very good simple one that would bolt straight on in place of the carb - don't know if they still do, but I am aware of many others specifically for straight gas engines and hi-performance straight gas engines. Do some research with google and you will start to get the picture.
Modern petrol needs a minimum 8:1 to get the best out of it, gas prefers around 10:1 - a lot of modern cars run around 10:1 so gas works pretty well on them. 9:1 should be a good compromise on a flathead. If memory serves, the 237 uses around 6.5:1, so you should be able to take about 80 thou off the head as long as valve clearance isn't an issue. Oviously there are some calculations that come into it if you get serious about rodding or gassing the engine. Valve overlap and opening time and distance all come into it with camshaft grind/design as well.
