This is because you have to move them out away from the drum otherwise the offset rim hits the drum. I had some duals on my 47wdx and they had turned down the outside diameter of the drums about 1/8 inch. The offset in my wheels was enough that there was an inch of clearance between the tires.

A few things come to mind. The hubs are desiged for singles and the one inch spacer moves the whole thing out even further which puts even more of and offset load on the wheel bearings, how well the axles and spindles hold up to this is debateable. Plus this means your rear outside tire is way outside the width of the front wheel. Now that I learned on this forum that the m37 housing is shorter, you could maybe use an m37 housing for the duals. Maybe if you are not hauling much weight the duals seems like it would be a beast for offroading, maybe even go with 7.50x16 so the bearing weight on the hubs and axles is not too great, plus with 5.83s you would have lots of low end power.

The truck I got my duals off of came from a truck the oilfield and the spindles were cracked. Duals maybe more of an axle breaker than singles.
