sounds like maybe a small air leak at bowl gasket? they wil go dry but usually not if started once and a while. One truck confounded me that way and it turned out to be pin noles in the fuel line where it passed thru a cross member. they only leaked so littel that you could not smell or see it. But that truck was not restored like yours. you probably have all new lines! even so those bowl gaskets can dry out and cause probs.
