Oh well, it's too late now. I think they turned them with the hubs and bearings out but the races in, which should center the drums regardless.
I gave them the drums with the hubs and bearings in, and the wheel nut snugged down. I assumed they would just chuck the whole thing up in the lathe and turn them as I delivered them. One thing I did notice, I marked the drums RF and LF respectively. When I got them back, the hubs were marked the same way by the guy who turned them so they at least looked at it and knew that they had to be matched...
They arced the shoes and they say they do that anyway without having to be asked so I figured they know what the heck they were doing in the first place, as that is apparently an uncommon practice.
