Did you replace the pressure plate and throwout bearing? Do you still have the old one to compare the new ones too? Maybe you got the wrong part. When I did my '67 Chevy pickup I put it all back together and had the same problem (clutch wouldn't disengage). Turns out there were two different pressure plates listed for that truck and they didn't ask and gave me the wrong ones. As I recall, the fingers on the wrong one didn't stick out far enough from the flywheel, so the throwout bearing couldn't push on them enough to disengage it. Since then I've had many opportunities to re-learn the importance of keeping the old part for comparison until the job is completely done and everything is working fine.
