I would say that it would have something to do with the fuel lines or filters. When the truck is running in idle it dose not pump as much fuel into the engine. But when you start to drive the pump is working overtime. Get a software program froma auto shop, they have many, i got some and they are now my bible. You can look and see everything from wire diagrams to hoses and others. Check it out and try the gas line, check the filter and if it continus to get dirty you need to take the tank and lines out.
