highway use like you describe is not a good app for ndts. they are horrible in most uses. if i had to do it again, id go for new michelin 1100 16 radials on stock rims. great way to get radials and higher gearing without changing out the rears. they provide approx the same benefit of 489s without permanently altering the driveline. a 251 with 5 speed od and 489s (same as your chosen tires), will likely be a bit underpowered.
i have 489s in my command car with stock tires and engine. really need more hp to make it all worth it. my truck is 100% crusier so the gearing was done to max road speed at lower rpm. i imagine it would not be ideal off road. long island is flat.
