Thermostat question

I took the thermostat housing off my old M37 so I could heat up the bypass housing and get the pipe plug out of it so I could hook up a heater. The thermostat is the old brass bellows type, though different from the ones I'm used to because the bellows are enclosed. It's stamped Thomson 155, which I assume means its a 155 degree thermostat. I'd probably be better off with a 180 degree unit for the sake of the heater and because it doesn't get very hot around here.

That brings me to my question. The old brass thermostats are made so they shut off the bypass when they open up the connection to the radiator. This seems like a real good idea. The new thin stainless-steel ones don't do that, so a certain amount of the hot water is always bypassing the radiator. People run these thermostats (I have) and things seem okay, but surely in hot conditions, it would be better to have all the coolant going through the radiator. I'm wondering if anyone else has an opinion about this, especially if they've had a problem with overheating with the new kind, and solved it by putting in one of the old kind.
