Use a professional car appraiser. They will give you a good value. I had a 58 Willys valued at 8K. The insurance want to give me 2K. I presented the appraisal and they come up with the 8K. The appraiser is one that they insurance companies also use.
It will cost a couple hundred for an appraisal but it is worth it.
