Any parts store that regularly supplies parts for heavy equipment should have what you need. Fortunately for you, a dump bed is about as simple as it gets. Any sort of hydraulic fluid should do just fine unless you spend time in extreme temperature environments. If you are in extreme heat (desert) you may look into an oil with a high viscosity. If you spend winters under several feet of snow, a low viscosity oil may be what you need.
If you are in both environments, then you may be forced to pay a bit more money for some high tech oil that can operate well under either condition.
If I were you, I would get some advice from the guy behind the counter and take into consideration price (I mean come on, this isn't a rocket ship), availability, and kinematic viscosity. Should be easy.
