As an update, I powder coated some small parts the other day. I put aluminum foil over the oven rack to keep it from being powder coated too.
The powder that stuck to and cured on the aluminum foil was remarkably flexable. I literally had to fold the foil in half for the coating to crack. Even then the powder coat was tough to peel back from the edges. So flexability shouldn't be an issue unless you get a really thick coating.
I do like it over paint because it's much easier to work with. No messy cleanup, no harsh chemicals or time limits. I can leave the gun sitting loaded for days between jobs as long as it's stored in a cool dry place.
