You need to clean them. Put them in a large bowl of water and spinkle salt on the top. This will draw the bugs out as they like to hide in the hoolow centers sometimes. If small, cut in half and rinse with water. If they are larger, section them to eating size.
Once cleaned store in the fridge till your ready to cook them as Chewie says. I normally resalt them too.Kevin
