Hey Todd, i've seen a similar process (to your crayon process) used on military restorations.

On stamped letters, paint the whole surface (or touch up the surface), blob on enough white paint to cover the letters, use a clean rag to wipe away the excess white paint, and the low parts of the stamped lettering will collect the white paint. Thus leaving the lettering white, and the rest of the surface the correct color.

It would probably be cleaner/easier to use a tooth pick or a fine brush to do the same thing, it would save paint too.
