Thermostat question

Sorry, one more question. Part of why the sno-cat heater didn't heat much and the temperature gauge didn't work was that there was no thermostat in it! I can't imagine why anybody'd take the thermostat out of a sno-cat (not like it's going to be climbing hills in the desert in August). Anyway, I had an NOS 160 degree thermostat on hand, which is a fancy brass contraption with bellows. It seats against two surface in the thermostat housing, and appears to cut off the bypass hose from the upper radiator hose when it's closed. I wanted a 180 degree unit, though so I went to the local auto parts store. The one they sold me, which he swore was a direct cross to the number in the PIF, is the typical modern stainless steel kind with no bellows. It seats only against the large (lower) opening, and leaves the bypass hose connected to the upper radiator hose even when the thermostat is closed.

Is this correct? I notice that hot water is going into the radiator before the engine is really heated up, and I'm thinking this might be why. Is this modern one-surface thermostat really correct? Would I get faster warm-up and more heater output if I used the old bellows kind? Can I get that kind in a 180 degree version?
