I personally don't like using stainless hardware simply because it galls so easily.

I made a grill guard for my Jeep Cherokee back in '98 with the thought of using it as a strong anchor mount for a winch. I slotted all of the holes so the guard could be adjusted and squared up with the front of the vehicle. I bolted all of the parts together for a test fit on the vehicle and used Stainless fine thread hardware. When I stood back to look at it, the assembly was a little "tilted" to one side. I went to loosen the hardware to adjust within the slots and I broke off the first 1/2-20 cap screw because it had galled when I first tightened it. I found that all the rest were galled also, so I just left it on the vehicle as-is.

I know, I know. I probably over torqued the fasterners when I first tightened everything down, but that is part of the old farmer in me.
