Good points. For most of us, working on our old rigs is what we do for fun, so it's hard to trade it against money. On the other hand, there are some aspects that are more fun than others. If body work's not your thing, swapping a good body onto a rare frame makes a lot more sense than fighting rusted out banged up sheet metal for a couple years' worth of weekends. Personally, I don't like body work, am no good at it, and aren't inclined to really learn much. Other guys might feel that way about rebuilding engines and gearboxes, or doing wiring. If we accept that this isn't a money-making proposition, then it makes sense to throw some money at the parts that aren't fun, in order to have more time to work on the parts that are.

Some guys send out their engines for rebuilding, but do all their own body work and enjoy it. Others (like me) would rather deal with gears, shafts, cast iron, and pistons than sheet metal any day and wouldn't think of paying somebody else to rebuild an engine, but will either pay a pro to straighten the body or (like me) throw fiberglass over the rust holes and live with the dents. Unless you're buying a turnkey ready to run truck, it's not so much a matter of whether or not we're polishing turds, but rather which turds we prefer to polish.
