I think I would much prefer the structural integrity of a floor poured right up against the poles, rather than grout, which could crack and break out.
If you watch how they are built around here, there is little activity on the ground inside the building, other than, perhaps, running a utility tractor that raises the trusses.
I have had two floors done inside of pole buildings and the people I use are very good and it turns out very nice.
