It slows heat transfer from the iron to the coolant. At least, it was a good sales point to use for selling flush jobs. And seems intuitive. Of course, if you did make a hot spot, I suppose it would steam clean that spot on the wall. So I suppose that the coating might just mean that that engine hasn't been overheated?
