I don't see how there is "another side" to the thermostat, the pump design is open, not sealed, so there should be equal pressure on both sides of the stat, unless you have a valve or blockage somewhere in the water flow, it should be the same, flow is not pressure, you're getting some weird anomaly in your rubegoldberg testing setup...= )
You're going to a lot of effort to explain a bad freeze plug, bored?
