That way, all the bolts heads will remain un-painted, for that real detailed look. Use stainless or chrome plated. You are going to us some hardened, double-throw-me-down paint, right? Something that can stand a washing. And most of the work you do will be inside? Plus you could wax it before continuing with assembly, to keep it easy-to-clean.
