Epoxy primer is recomended to be applied on bare metal. If you dont want to strip the inside of the cab then I would scuff the old paint and put a regular primer on it and then paint. You may have good luck and you may not in a few years as you are putting new chemical types of paint on the old school paints.
It sounds like you are doing things right on the outside so why stop now on the inside? I'd strip the inside as well.
