I insulated a van using the R-11, 1" foam boards, just back cut them with a utility knife to make the radius (slight "V" cuts it the foam to allow bending, it worked fine. I agree that the expanding foam would probably weight about 150 lbs after you were done, but you can use the "super expanding" foam to seal any gaps in the board. It's expands about 10-1 and is very light.
I've even seen 1" foam rubber padding used, but your walls had better be waterproof, or you'd end up with a soggy mess.
