You are still getting contamination in the oil even when the engine sits. Teh engine is an open system even when not running. One of the biggest problems is the air in the crankcase. Water condenses out of it on the cold metal and runs down into the oil. As the air temperature goes up and down air is moving in and out of the engine (example through the oil filler cap) bringing more moisture with it. This is why you see recommendations for oil changes like XXXXX miles or so many months.

Yes the oil properties are not degrading and the oil is not dirty but that moisture is a real problem.

The same process occurs as you use your brakes. The master cylinder has a tiny vent in it which air moves in and out of when you use your brakes. The brake fluid absorbs moisture from the air and bummer you get pitting from this moisture.
