I don't think bolting would be a problem, although I would be tempted then to use stainless steel fasteners due to the potential for rusting.
What I was referring to is that red oak holds water more than white oak, due to its cellular structure, therefore the need for careful finishing. I am not sure about hickory and its rot resistance, but I don't believe it is rated higher than red oak. Mar-K offers the red oak in their bed kits, or yellow pine depending on what the person chooses.
Let us know how it works. I would imagine that after air drying the hickory would not change much, and you are right, it is VERY tough.
If the truck is parked inside it really should not matter that much as to the wood I think, if it is finished well with a modern spar varnish or something. Mar K and Bruce Horkey both have in their literature advice on finishing truck beds.
