I would guess its fuel related. Probably in the carb. Maybe the float and or needle and seat. Sounds like the angle of the long hill is causing something to get in the way of fuel.

I do not think its carb icing. You did not tell us the weather conditions but I would think if you were going to have a carb icing problem you would not get very far from a cold start up. I experience carb icing on my old 47 when the humidity is just right and no other time in the winter. After it finally stalls after a few minutes it starts back up and all is well after that. I just dont see carb icing happening after you have been driving the truck for sometime allowing things to get fully warmed up.
