Yeah I dont see why you cant do that. In a truck application things may be more setup for low end torque rather then high flowing high horsepower rpms of a hot 383. So changing the heads and exhaust may not help you if you were wanting to pull.
I wonder how many 361's are really around. You dont see many of them at car shows in cars.
