I dunno which, or when they stopped. 218's maybe? Studs will give a truer torque, because they can be replaced with new ones and nuts, and you won't be torqueing in a groddy hole.

Many holes for studs are "interference fit" They go in tight, so they stay put and also for better sealing. Yes, seal any fastener that goes in to the water jacket.

It can be a real PITA to get a head to slide down the 21 studs without binding though. Not to mention scraping the old gaskets around 21 obstacles too.
