I'd say it all depends on what you are doing. Aren't you gonna get adjustable height counters on your side walls or on rolling tables?

Since you have the room, you might be able to do a couple different heights. Do you want to sit on a normal chair or on a bar stool. You may have one at 30" and another at 42".
Also depends on what you are making the counters of and how are you going to support them? Lower will give you better leverage if you have to really torque something on/off

my rolling tables are at 30" and my work counter is at 37". I'm 5'-10 and they are comfortable to work at.

Electrical outlets. I'd have hanging outlets from the ceiling. at the walls, I'd put them 12"-16" above the work surface. I would not put them near the floor if you plan on washing things out at some time or another.
