Here is a tip that I learned when I had my engine rebuilt. GO on the web and find out the contact information for a local/regional Ford Model T or A club. There are usually a lot of these across the country.
Undoubtedly these guys will know where to go for flathead engine work.
I found one guy in my county, who did machine work for lots of old iron (like the Fords) as well as newer engines out of his home machine shop. He did a great job for me, and unfortunately for others is now retired. The primary think about a flathead rebuild he said was: 1. The valve train work, and 2. decking the head (mine was slightly warped, which is a common problem). None of the "modern" machine shops I talked to were set up to do the valve work on a flathead, and did not seem too interested in a flathead.
