Michelle That sound like a bad gauge to sender hookup is a part of your problem. My old gauge in the same year and model did the same thing so I put in the after market one and IT showed that I was actually running colder than the old gauge was showing. Remember I live here in AZ also and drive in the same heat as you and hit a lot of the hills between phoenix and flagstaff so I have had the exact same problems as you have had. I don't have a gooseneck or fifth wheel but pulling a trailer is pulling a trailer. good luck let me know if I can help suggesting a few things I did to cool my old girl down.
