Here is how I am looking at it...

You want more road speed, so you NEED a dual master Cylinder, and Power Brakes so you can STOP.

You most likely want at least front disc brakes.

You want Power Steering for better driving, and road feel.

If you use the stock axles, all the bits have been made, and people on this forum can help you with their real world experiance.

If you decide to go some other route you will still have to buy many of the parts I listed, just for other axles, etc. Then you will have to figure out how to make all the bits fit on your own, which may require making custom parts, etc. Depending on your skills, and what kind of tools you have to work with, all the parts I listed might be cheaper and SAFER then your own conversion.

To be honest I think stock axles, V8 power, front discs, PS/PB and a dual master take care of most needs. If you want to go further, a NV4500 mated to a NP205 with a centered rear diff should give even more speed, and reduce drivetrain noise.

I mentioned the lockers, stronger axle shafts, etc as you were considering 2 1/2 ton axles, and the only reason to use those is to have a STRONG driveline.

I think a nice set of dana 60s or 70s should do the trick, it is all a question of how much work you need to do to get them to fit and work right.

All of this is just guesswork on my part. I have only watched others do this sort of thing, and paid attention when people told me how they did their conversion. I have never done this sort of conversion myself.
