Terry,
A "stroker" motor is one in which the stroke of the piston is increased. This is accomplished by modifying/changing the crankshaft such that crank arm effectively travels further up and down the cylinder. Without changing the pistons you will have a higher compression, and because of the longer throw, higher torque. Usually the pistons are changed to lower the compression somewhat to compensate. The piston rods are also often changed to obtain optimum output.
In short with each stroke more work is performed yielding better torque. The downside is that the pistons travel farther so the motor tends to have lower maximum rpm's / top end horsepower.
