My father in law lives in a big log cabin with really high ceilings in North Idaho, and with little southern exposure. We replaced the roof on that house (it had shakes also) a few years ago with metal. From top to bottom it goes Metal, 1x4 skip sheating, 30 lb felt, 2" foam (the kind with foil on both sides), felt again, and 2x6 T&G (or whatever you have there). Havent had any problems, and the house is heated with a woodstove, and stays really cozy even at 20 Deg or below. In fact, I dont ever remember going in the house and it being cold.
