I wanted to throw in my $0.02 worth too, but wasn't sure how best to say it. Scott's right though. When we rebuilt our old cabin, we had a shallow pitched 2x6 t&g ceiling/roof covered w/ tar & gravel. We left the roof intact, and installed specially ordered scissors trusses where the bottom angles of each truss were pitched to fit right over the roof, and the top angles of the trusses formed an aesthetic and functional (for snow shedding) 12/4 pitch. These trusses even relocated the center ridgeline which had previously been off center. The trusses were topped with OSB and a standard metal roofing installation. Adding the trusses gave adequate room for big insulation (blown in fiberglass; I'd have to look up the R-value) along with some air space for ventilation necessary in our climate (and many others) to prevent condensation. If your existing roof is already steeply pitched, it may be hard to follow our plan.
