There are two ways that hubs can be designed to engage and disengage:

First type: truly a manual set-up, where the levers that engage and disengage are twisted by the operator. (Dualmatic) Engagement and disengagement is accomplished with no spring tension. These can be filled with grease, but it is not recommended, for the reason that Paul (in NY) stated: The viscosity in cold weather will make operation difficult.

Second type: The various other designs (Selectro, Perfect Circle, Warn, Superwinch, ATM, and OEM) all use a set of sliding gears that operate against a coil spring, and rely on the spring and sliding gears to disengage.

It is the second type that are intolerant of over-greasing, because the grease interferes with the sliding parts, and the spring tension cannot overcome the viscosity of the grease.

A light coating of grease to inhibit rust, and to allow easy operation, is all that's needed, on either type.
