You can use a grade 2 5/16 bolt. I have sheared a few of these with no subsequent damage to the winch mechanism.
Don't use a higher grade of bolt, as they are heat treated and therefore stronger than a grade 2. If you're in doubt, heat the bolt to a bright red, almost orange color and allow it to slow cool. This will anneal the steel for maximum softness.
