The story that was going around at the time was that McQueen wanted to drive his own car but the studio wouldn't let him (he had a Camaro) for insurance reasons. So he drove the Mustang, but it had the block out of the Camaro which was built up pretty good.
As far as him driving the stunts, if ya notice, some scenes there was a rearview mirror and in some there wasn't. This was done so they could edit in stuff. Once again, the insurance companies controled the stunts.
