I also get loads of emails saying they want to buy stuff from me, pay by credit card, and have it shipped to Nigeria. Then there are the usually 419 scams where they have a big story of how they found $20 million (usually real close to that amount) in a secret bank account and want to cut you in on part of it. Mostly, I just delete them all, which is what I'd do with the guy wanting to run a scam via your ambulance. Sometimes for fun I tell them I'll be happy to sell them what they want so long as payment in gold coin is received by me prior to shipping anything.

If I was you, I'd let the guy send me the forged cashier's check (which is what it undoubtedly will be), and I'd then take it to my bank, explain the situation, and let them pass it on to their fraud department or the FBI. Not much work on your part, and it might help them eventually put a stop to these games. There is no way in hell the offer is legit, so you don't have to worry about not delivering on your end of the deal.
