First, starter will turn the correct way regardless of polarity. Second, if you have a mechanical voltage regulator (no transistors in it), you don't need to change it to change polarity. All you have to do is connect the battery the way you want it, and polarize the generator to ensure that it makes electricity in the right direction when you first start it up. Of course if you have an alternator or a transistorized regulator you'll need to swap them for a negative-ground model.
