Looking at all the different disassembly directions, they all appear to be press fit on. The housing has to be removed (two screws in the back) so you can grab onto the "speed cup" (the piece on the very back of the assembled shaft) and hold the shaft still while twisting and removing.
For speedometers with needle indicators, it says to turn counterclockwise while pulling the needle off.
For plastic discs, all say the same (turn counterclockwise while pulling off) except for one which requires a special tool to reach up through the odometer wheel hole and pull off the dial face and plastic disc together.
I don't see any example pictures with a center metal piece over the plastic disc, but I would guess it is turned counterclockwise too.
