Speedo's work via the cable spinning magnets that then draw a steel core along with them. The speed o tis direct drive, the odometer has a worm gear. Very simple mechanism. The fact that yours works but jumps makes me think you still have friction in the head or cable. Messing with the clearance between mags and core is touchy and only works for calibrationn, not jumping. You can test the speedo head by driving it with a drill motor running in reverse, forward will run odometer back. Just use a nail filed square, or the stub of a broken cable in the chuck. If head runs well, try motor on cable with cable hooked to head. If now jumpy, cable is bad spot. Cable should not be routed with any hard bends, I like to loosen any clamps and let cable find it's own path. If cable casing is burned from exhaust, it's probably got to go. If you know the ratio of the speedo drive gears in the transfer case, you can also calibrate it with a drill.

My current project had one long cable running through 2 short casings taped together, Mexicaneering that worked I guess. But my head was froze up til I lubed it, truck is currently scattered all over the backyard, won't know if it really works til spring.
