..Jumper's post reminded me that Edelbrock has a new carb series for off-road use. It eliminates bowl slosh on sidehills and at extreme angles. Unfortunately I think it only comes in 650 and 800 CFM so that limits your choices of size. I'd recommend the 650 and then tune it to your requirements. Thunder Series off-road carb.
