Bolts are normally course thread UNC directly into the block.

Studs are course thread at the block end, but fine thread at the nut end (UNF?) so you can torque the studs into the block with a lower torque setting, then torque the fine thread nuts to a higher torque setting (assuming the nuts aren't at the end of the fine thread of course) and achieve more tension on the stud without stripping the course thread in the block.

I've been told that fine threads are actually designed to allow higher torque values, and of course most military heads are held down with studs and nuts except the original jeep, and even there owners will swap out the bolts for studs and nuts if they are having head gasket problems to see if higher torque values will seal it.
