You should be able to work it out from that capacity, but if the head has been faced once or twice before...
If you have a local non-destructive testing place it should be possible to borrow an ultrasonic thicknes measurement guage and run it over the working face of the head to find out the minimum thickness of metal that's left there - should work for the block too I suppose.
